Default Graham Kerr's chicken and vegetables with cheese

This is from Graham Kerr's "Galloping Gourmet" show back in the 60s, before
he went low-fat. My mom used to watch it religiously, and wrote down the
recipes that looked good. I recently bought his cookbook from that era, and
this is not in it, so I hope by being posted here it won't be lost to time.
It's a great recipe, easy and tasty.

1 frying chicken, cut up
3 Tbsp margarine or butter
3 fresh tomatoes, quartered
2 onions, quartered
1 clove garlic
1 green pepper seeded and cut in strips
1/2 lb mozzarella cheese

Melt butter with garlic in frying pan. Brown chicken at medium heat. Remove
garlic (I never do, but you probably should if it looks burned). Add
tomatoes, onions, green peppers. Cover and cook until tender. Uncover; lay
slices of cheese over chicken and simmer until cheese melts.

Best over mashed potatoes, but also good over rice or noodles.

Yuck! Was this when he was drinking a lot? He had a potentially nice,
if ordinary, dish going there and all he needed was some seasoning and
herbs. Instead, he melted mozarella over it!? and then wants to eat
it with mashed potatoes?! To each his own, of course, but this one
ain't for me. -aem
