A different kind of chocolate chip cookie
 
Chocolate chip cookies are a favorite of mine..comfort food, I guess you'd say. But
they are something I don't get to eat very often because of what they do with my
blood sugar.
Well, last night I was absolutely craving them, and nothing, nothing, nothing else
would do!
So, here's what I came up with:

1 cup smart balance
3/4 cup brown sugar
3/4 cup Splenda brown sugar
2 eggs
1 c unbleached wheat flour
1 tsp bak soda
1 tsp salt
2 cups oats (processed in food processor until almost like flour)
1/2 pkg chocolate chips
1 cup dried cranberries (I used Trader Joe's)
Prepare the usual way, cream the "butter" (Smart Balance) and sugars, then add eggs.
Stir together the dry ingredients, then add to the butter/sugar mixture. Stir in
chips and cranberries. Bake 9 minutes @ 350*f.

They came out chewy and delicious...and when I tested after an hour, they'd hardly
raised my blood sugar at all. As an occasional treat, I think I found myself a
winner.

Nice. Along with the rolled and steel-cut oats I buy for eating, I buy extra
to grind like this as flour too.

Umm... Heathy *and* tasty! I like that. With the weight I've lost so
far, I'm now off my diabetic meds, but I still have to watch what I eat to
prevent BG spikes. Copied and saved, and thanks!

I forgot to mention Wayne...you'll want to take them out when the centers are just a
little underdone, so they stay chewy....unless of course you like them crisp! ;)
Also, they are a little darker than regular chocolate chip cookies when they're done.

Thanks for the tip, Kimberly. Actually, I like them either crisp or chewy,
so will probably time them to get some of each. :-) Yes, I guess with the
wheat flour and oats that they would be somewhat darker.
