I put the wings in a large roasting pan with about a 2" of water. Bake
covered until the water is boiling. Drain most of the water. Then top with the following sauce. 1 c ketchup 1/4 c vinegar 1/4 c brown sugar good dash of soy sauce one finely chopped onion (optional) good sqeeze prepared mustard Depending on how many wings you are making you may have to double or triple the amount of sauce. Pour sauce over wings, cover and return to oven. Allow to bake at least one hour covered at 350 F. Remove lid and continue baking until sauce is reduced but still enough to ladle a bit out to go on your rice. Serve with white rice topped with a little sauce. My notes: The meat will literally fall off the bone. This dish re-heats well but does not freeze well. A bit of garlic is nice in the sauce if desired. |
