When I get a burger at TJ's here in Cow Hill, I always go for the jalapeno cheeseburger with cheddar and the works. And onion rings, of course. TJ's closed for a few days this week -- some sort of dispute over a nasty divorce in a community property state. He left her, and he wanted half the business or a cash settlement punitive enough that she closed up shop rather than give him a dime. Word has it they're back in the saddle as of yesterday. I, for one, am much gratified at the news. You wouldn't believe the onion rings those folks make, and the beef in their burgers is really fine. Really fine. -- modom |

A couple years later, In-n-Out made it to NorCal. Been a cheeseburger junkie ever since. To answer the question, I prefer Kraft American cheese, but will try other "real" cheeses. Unlike Sheldon, who says he won't freeze meat ground for burgers, if I buy 6 pounds of *ground beef*, I freeze it in 1 pound increments in freezer bags when I get home. Makes more sense than 6 pounds of home-ground beef, doesn't it? From there I can make meatloaf blended with ground sausage, etc. in 1 pound increments, of course. Jill |

I have seen that Hamburger documentary where they have burgers with peanut butter and one place that puts a huge slab of butter on the burger. My favorite is Dyers in Memphis with the deep fried burgers in 100 year old grease... But in term of cheese, usually cheddar (not sharp) but pepper jack is a nice alternative. All the women proceeded to disassemble the burgers and eat them your way, but the bun as well. I never did it again. They hated the coleslaw and loved the potato salad. Some things just don't transfer. Since there is no cheddar here, I occasionally fool around with roguefort or gorgonzola both of which are good. We do have Kraft Singles, here called "Sotilette." But that is for sandwiches made with pancetta magra, tomato and rucola on whole wheat toast. Unfortunately, ground beef is pricey here. Burgers taste good to me also made from lean ground pork. |

Last time I checked, it's called "chopped steak" on a restaurant menu. Doesn't come with a bun or bread of any kind. My grandma Brown's "mince" might suit you just fine. It's merely ground beef seasoned with salt & pepper (okay add some onion and garlic if you wish) browned, with most but not all of the fat drained off. Then add 1 cup of water and 1 Tbs. Worcestershire sauce, cover and simmer until the "gravy" (which isn't really gravy) is reduced. Serve it with some peas (if you can eat peas) or any veggies that fit your diet scheme. It's suprisingly simple and very delicious. Jill |

Just recently I moved my carb limit up to 100 carbs a day since I bottomed out at 200 lbs (for 4 months now). So I can at least have a small portion of bread, potatoes, rice or pasta now and then. Gonna stay at 100 carbs for a month then go back down. See if that makes a difference. Doc wants me in the 175-185 lb area. -- -Alan |

Your second and third choices should cost around $7/lb. At least
Boar's Head brand or better. New Topic: those wonks at Cook's tested 47 varieties of cheese for grilled sangwiches and decreed that Swiss Emmentaler produced a sour taste and that Dutch was preferred. Hmmmm. And I thought it was the pickles I was eating. |

If that's what's being served, I'll have one, but there are any number of other things I'd prefer. I rarely make them for myself. A sort of exception is for White Castles, but those are really a whole different breed of cat.
