That's a round steak, pounded, marinated in nuoc mam and lemon juice,
stuffed with lemon pieces, minced ginger, minced serrano chile, and
mint leaves. It was rolled and tied and grilled. Also on the plate
are grilled cabbage, roasted sweet potato rounds, cucumber marinated
in rice wine vinegar and mint, and some green beans leftover from the
other night. That's a cara cara orange. I never heard of it before.
The color is pretty accurate on my monitor. The sauce on the meat is
a reduction of the marinade fortified with demi glace and seasoned
with mint, more ginger, shallot, and a couple of kaffir lime leaves.
