Default Dinner and a shout out to SF

Was making stuffed eggplant but I ended up making too much stuffing and since
I don't eat the eggplant shells anyway I just put the stuffing in a little
casserole pan

the stuffing was white rice, tomatoes, farmer cheese, spinach, schnibble fried
eggplant innards, salt, pepper, penzey's greek seasoning and covered in pasta
sauce.

And they had sunchokes at the grocery store today so I made the sunchoke SF
posted a while ago

Wow, that sounds really good! What time should me and my appetite
arrive?

LOL- I've got a prejedice against sunchokes. I grew up hearing them
referred to as "jerusalem artichokes" and was always curious.
Artichokes are definitely a favorite of mine, so the first time I had a
chance to try these new kinds of artichokes, I jumped at the chance. I
was probably about 11.

Needless to say, they're NOT very much like a whole globe artichoke, so
I hated them on the spot. Haven't had on since, but of course I haven't
seen them at my grocery, either. Now that I'm older and wiser (snort)
maybe I'll give them another shot if I see em.

I really should have gotten a pork roast or something to go with dinner since
david isn't here.

Advice taken. Won't go out of my way to look for them then. I'll stick
to my overpriced california artichokes.

kick it and swear at it, that's what works for me with most things.

Okay, the eggplant stuffing was fabulous....sunchokes only meh, but not bad.
