I've heard that woodlice taste just like shrimp, but I haven't had the
opportunity to test this. (You need a lot of woodlice to make it
worthwhile.)

I didn't know what woodlice are, so I did a google. Eeeewww.

They look a bit crunchy, and I can't imagine they taste like shrimp.
I bet they are bitter, like most bugs.

Not quite, sashimi is raw and sushi is a method where "something" is
presented with vinegared rice. The "something" could be cooked/uncooked,
vegetable/fish/egg whatever.
