Default Coconut milk sub?

I thought I had a can of coconut milk in the pantry but it seems I don't.
I don't suppose anyone has a magical substitute?

Or do i have to re-think what to make for dinner?

If you were making a curry, use chicken stock. different flavor,
different texture, etc, but it should work.

Depends what you're making. If you're making curry, I'd just leave it
out and use broth or water instead.

Do you have sweetened, flaked baking coconut? I've simmered that along
with milk or water to get a similar flavor. Cut out any added
sweeteners, of course. You can leave the shreds in or strain them out.

One suggestion I've seen for an easy substitute is Evaporated Milk
plus Coconut Essence.

I presume you could use whatever sort of the milk grabs your fancy,
and add enough drops of the essence to get the taste you want.

I've done this, too (with milk). I let it cook down and then strain it
well.
