Default Creole Fillets Recipe

Creole Fillets Recipe

Serves: 4 to 6 servings

2 lbs. halibut, sole, flounder, pollack fillets
1 1/2 cups of chopped tomatoes
1/2 chopped green pepper
1/3 cup lemon juice
1 Tablespoon salad oil
2 tsp. salt
2 tsp. minced onion
1 tsp. basil leaves
1/4 tsp. coarsely ground black pepper
4 drops of red pepper sauce
Green Pepper Rings

Heat oven to 500 degrees. Place fillets in a single layer in baking
dish, 13 1/2x9x2 inches. Stir together remaining ingredients except
pepper rings; spoon over fillets. Bake in a moderate oven (350 degrees)
30 minutes or until tender. Remove to warm platter. Garnish with green
pepper rings.

Curious.. why do you call this Creole? Is it the 4 drops of red pepper
sauce? lol
