I had a lot of food left over from entertaining over the weekend and today
had to get into the refrigerator and make some space.
Into the pot went some leftover carrots, broccoli and cauliflower, as well
as some mashed potatoes, plus I put in a lot of salad stuff (why did I ever
fix so much?) - picked out the radishes, but chucked in the lettuce, spring
onions, celery, carrot slivers and cut up some more tomatoes.
Added salt and pepper and some Italian seasoning. Let it simmer for quite a
while then whizzed it with the hand blender. It was a pretty good mystery
soup.
Boy, do I feel frugal.
