I prepared leftover (home made but then frozen) chuck roast in gravy last
night along with some rice as a side. I still have way too much leftover! I'm thinking of stirring it all together, adding some dark red kidney beans or maybe black beans (yes, from a can) and spicing it up to create sort of a one-dish Tex-Mex rice and beef dish. I could add sauteed onion and garlic, Mexican oregano, some ground ancho chili pepper (smokey but very little heat). Maybe a little ground chipotle or some hot sauce for a little heat... or maybe some of those canned diced jalapenos. Just musing, here. AC might suggest I add some corn chips and turn it into a casserole a la Cooking with Jolene Sugarbaker LOL Jill |

I actually make a Tex-Mex braised chuck that is a similar set of flavors. |

Interesting concept! I normally make jambalaya with andouille or chaurice sausage. Along with onion and garlic I'd need to add diced bell pepper (I only have Penzey's dehydrated) and some diced tomatoes (I always keep a few cans of those around). It's a thought ![]() Andy! Jill |

You're on the right track, but using the wrong peppers (IMHO.) Ancho is OK, but don't mix it with those others you listed. I'd probably cook it to pieces with ground New Mexico chilies, beef bouillon, onions, garlic, cumin, oregano, etc, and shred it for making soft tacos and burritos. Bob |

i use leftover beef in my mexican casserole.
add spices, salsa, and layer with tortilla's. sprinkle with cheeses and bake. serve on chopped lettuce and sour cream! -- |

Potatoes, onions, other veggies, and a small dice of the meat, sauteed in butter until it all gets crispy. Mmmmmmmm. serene, who makes turkey hash every day-after-thanksgiving |

I removed all but about a Tbs. of fat before I thickened the gravy. Too late anyway, I've proceeded with the Tex-Mex theme, with a few adjustments. I didn't use the chipotle pepper. I did decide on black beans and some ground ancho pepper. It tastes pretty good! Jill |

And no...I don't really care what you "contrived" with three green beans, one scoop of grits and two cups of a questionable container from the back of the refrigerator........delete the pics.....that is even more repulsive. |
