Buttermilk and Sesame Seed Fried Chicken
http://news.enquirer.com/apps/pbcs.d...0307/1036/LIFE MARINADE: 1½ cups buttermilk 1 teaspoon salt ½ teaspoon ground black pepper 1 teaspoon onion powder 3 medium garlic heads (crushed) 1 teaspoon sugar CHICKEN: 3½-4 pounds chicken parts 2 cups all-purpose flour 1 teaspoon salt 1 teaspoon ground black pepper 3 tablespoons sesame seeds 2 cups vegetable shortening 1 cup bacon fat Stir together marinade ingredients in a bowl. Add the chicken and turn to coat. After marinating, remove chicken and let air dry 30-35 minutes on a rack. Mix the flour and seasonings in a bowl or paper bag. Heat the oil and bacon fat to 350 degrees. Coat the chicken with the seasonings and gently lay the chicken pieces skin-side down in the hot fat. Once the bottom side has browned, turn and brown the second side, making sure the chicken is not cooking too quickly. Total cooking time is generally about 20 minutes. Makes 2-3 servings. |

Rather than "½" they see a blank rectangle or a question mark. Whenever I cut-and-paste a recipe to post, I always go through and type out the full fractions, e.g., "1/2" instead of "½". Thanks for the recipes! Bob |
