Kellogg's Original All-Bran® Muffins recipe was the springboard for these
muffins. They are really delicious and surprisingly healthy. Wayne's Spicy All-bran® Muffins Recipe By : Wayne Boatwright Serving Size : 12 Preparation Time :15-20 Min.; Baking Time 20 Min. Categories : Quickbreads, Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 Cups Whole-wheat Flour 1/4 Cup Splenda 1 Tablespoon Baking Powder 1/2 Teaspoon Salt 2 Teaspoons Mixed Spice 1/2 Teaspoon Dry Mustard 1/8 Teaspoon Cayenne Pepper 2 Cups All-bran® Cereal 1 1/4 Cups Nonfat Milk 2 Teaspoons Orange Extract 1/2 Cup Egg Substitute, Liquid 1/2 Cup Applesauce, Unsweetened 2 Tablespoons Molasses 1 Cup Golden Raisins Preheat oven to 400° F. Coat 12 muffin cups with non-stick spray. In a medium mixing bowl, stir together flour, Splenda, baking powder, salt, and spices. Set aside. In large mixing bowl, combine All-Bran® Cereal and milk. Let stand, stirring occasionally, until cereal softens and looses its shape, 10-15 minutes. Meanwhile, in a small mixing bowl combine egg substitute, applesauce, molasses, and orange extract. Whisk together until well blended. Combine egg mixture with softened cereal, blending well with fork. Blend flour mixture into cereal mixture, combining well. Fold in raisins. Portion batter equally among the 12 muffin cups, and bake about 20 minutes or until golden brown. Serve warm, or cool completely on wire rack. May be frozen. Description: "(reduced calories, fat, cholesterol, and sugar)" Yield: "12 Muffins" - - - - - - - - - - - - - - - - - - - Per Serving: 138 Calories; 1g Fat (5.9% calories from fat); 5g Protein; 31g Carbohydrate; 5g Dietary Fiber; 1mg Cholesterol; 266mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 1/2 Fruit; 0 Non-Fat Milk; 0 Fat; 0 Other Carbohydrates. NOTES : 2 Weight Watchers Points per Muffin -- Wayne Boatwright @¿@¬ _____________________ |

Probably tastes better than it sounds. I just made your fabulous gingerbread for the first time. Not only did I not cool, frost, and age the cake, I ate it hot out of the pan. I thinking I'd skip the splenda and orange extract and add a couple shots of Grand Marnier instead. Figure that and the molasses and raisins would account for the sweetness. As you make it, how many grams of sugar in your muffins? Andy |

As you make it, how many grams > of sugar in your muffins? I didn't have any Grand Marnier, Andy, but it sounds like a good idea. The nutritional breakdown shows 31 grams of carbohydrates. The original recipe called for 1/2 cup sugar, no molasses, and no Splenda. I wanted the molasses for flavor and, obviously, wanted to eliminate the sugar by using the Splenda. Better for my Weight Watchers program. I took a batch of these to work last week and they didn't last 5 minutes. :-) -- Wayne Boatwright @¿@¬ _____________________ |
