Default Layered salad for lunch

This turned about better than I had imagined: a salad that started as a way
to get rid of ome left overs:

Form bottom to top it contatined layers of:
shredded iceberg lettuce
cubed cooked beets
crumbled feta cheese
sprinklings of chives and spring onions (scallions)
a dollop of dressing (see below)
toasted pine nuts
bits of curley parsley

The dressing: mayo, yogurt, salt, pepper, lemon juice, balsamic, pinch of
sugar.
Although the balsamic was good for the flavor, it wasn't for the color.

I have some left over beets and iceberg. Tomorrow, I'll try a dressing with
yogurt, mayo and pomegranate syrup. I am pondering using crab sticks
instread os feta, but am hesitant about that. I am also considering adding
tomatoes or apples. I'll see. If I'm doing the crab thing, I'll consider
adding orange. I'll go by smell and looks as I go, I think.
