Default Dinner & new recipe

I was in the mood for potatoes tonight, but couldn't find anything that
quite fit the bill. I found this new, wonderful discovery in Laurel's
Kitchen. It worked really well, and it really doesn't need any
modifications!!

Papas Chorreadas

4 medium potatoes, scrubbed and cut into smallish chunks
1/2 lb green beans, trimmed and cut into 1" pieces
1 T butter
1 medium onion, chopped
4 green onions, chopped
2 cloves garlic, minced
1 t cumin seed
1 t oregano
2 c chopped tomatoes
1 t salt
1/2 c cottage cheese
3/4 c jack cheese

1. Steam potatoes. Steam green beans. (they say to do it sperately, but
I added them to the potatoes around 3 minutes before they were soft.)

2. In a skillet, melt butter. Saute onion til translucent. Add green
onions and garlic and cook until softened.

3. Sprinkle in cumin and oregano and cook for 1-2 minutes.

4. Add tomatoes and salt, and simmer 10 minutes.

5. Stir in cheeses.

6. combine with potaotes and green beans.

As suggested by the book, I served it over softened corn tortillas.
Alongside I made a salad of mixed greens, oranges, and avocado, with a
cumin-citrus vinaigrette. (also suggested by the cookbook.) I also
served cubed honeydew.

I made a cilantro-jalapeno-garlic-lime 'pesto' in the mini-chopper to
spice up the potato dish a litle. The book hasd an optional chile as an
ingerdient, as well as 2 T cilantro stirred in at the finish, but the
kiddo doesn't like things hot, nor does she like cilantro. So it became
a topping, which worked well.

Dessert is leftover magic Cookie Bars.

This was delicious for a rainy, chilly day!!
