I'll give him that. There's gotta be some sort of value there somewhere. To each his own. It's not my favorite show, but my favorite shows probably wouldn't be appealing to you. I agree that some of the information is more than I need to know, but it doesn't hurt. Heaven knows there are plenty of "why does X do Y?" questions *here*. When Alton says "a souffle falls because...," I listen. When he illustrates different kinds of fats with a toy train, it sticks(!) in my mind longer than reading a page of print. I'm probably not going to ever smoke my own bacon, so I'll skip repeats of the junkyard competition show, but the chocolate chip cookie one is worth making notes from. |

I love AB's show, but we've decided that as a family, we're watching too much television, so we're dumping our satellite dish connection. Y'know, we went through much the same thing, but I found that the main difference was that WITHOUT the satellite, we were watching way too much LOUSY television. With the satellite (Direct TV, for what it's worth), I find I spend most of my TV- watching time on such things as the History Channel, Discovery, Food Network, etc., and practically none on the same ol' braodcast-network drivel. I, for one, know most people haven't a clue about cooking en papillote, or how easy and convienient it can be. It's a natural for the microwave, bringing classic French cooking and modern, time-saving technology, together. I've been cooking since I was 5 and I still learn something new on almost every show. I had problems with the yogurt in Indian curries breaking. Alton explained why. He did a episode on beer. Being totally intrigued by how easy he made it look, I found a brewing mentor, have brewed 20 gals of beer, and am well on my way to completing my own stainless steel, 10 gal, all-grain brewery. After spending 30 years watching a long chain of tv cooking programs show the same mind numbing close-up of the cook mincing an onion or slowly adding each ingredient of a cake recipe to a droning Kitchen Aid, I think Good Eats is a godsend. Tonight, Alton does tomato sauce from scratch. nb |

Good Eats is one of best shows on the cooking channel.
Far, far more intelligent and accurate than the cooking clown, Emeril. Where else do you learn that browning beef is for the Maillard effect and not perpetuating the myth of "sealing in juices." Many kudos to Elton. |

Elton Brand is fantastic. Last night he did fried chicken I learned two very important techniques. I am analytical by nature so this show lends to that other level of thinking that Emeril doesn't. Don't get me wrong I enjoy Emeril also. |
