Thanks, Michael -- Happy Mother's day to you too! :-) I received
a dozen red roses and a lovely card from Miguel and a wonderful
hand-crafted photo and frame from Buddy. Later, we're going for
a ride on our new boat, and they're going to make my favorite meal
for dinner:

Sweet & Sour Chicken Wings - Jani B.

12-16 chicken wings
2 eggs, beaten
2+ C. flour
Cooking oil

Sauce:

¼ C. pineapple juice
¼ C. white vinegar
¼ C. ketchup
¼ C. brown sugar, packed
½ C. honey
1 tsp. salt
1½ tsp. soy sauce

Mix all ingredients in medium saucepan, no heat. Dissolve 2 T.
cornstarch in 3 T. water, add to sauce, mixing well. Cook over
medium-high heat, stirring constantly, until sauce comes to a
boil. Let cook 1-2 minutes, stirring, until sauce is clear and
thickened. Let stand.

Cut wings at joint, leave tips attached to middle pieces or
discard them. Dip wings in egg, roll or shake in flour. Brown
well in hot oil in large frying pan over medium-high heat. Place
in single layer in baking pan, bake for 30 minutes at 350º F. Lower
oven tempurature to 325º F. Brush wings with sauce, bake for 15
minutes. Turn wings over, brush with remaining sauce and bake an
additional 15 minutes. Great with baked potatos.
