Here is some info on causa http://perufood.blogspot.com/2006/02/recipes-causa.html There seem to be many versions, so you'll need that particualr recipe if you want to replicate it ![]() She brought along her nephew (also from > Lima) who is going to college here. You're correct - I didn't find any recipe resembling the causa which Lili fixed. I should have asked her more about the different flavors. She had a special round pan, with (I think) a removable base. The dish was turned out looking very compact and smooth. She spread mayonnaise on the outside and garnished the top with quartered hard-boiled eggs and Peruvian purple olives, then placed it on lettuce leaves on the platter. It was really attractive and different. She has made the dish before, but without the mayonnaise and garnishes; when she did, she had special flat molds to press little decorations into the top of the dish. It makes a great starter. Dora |
