Default What to make for my own birthday dinner tonight?

I told DH that I didn't want to go out tonight because we had chinese
on friday and went out on saturday and had leftover chinese on sunday,
so I had three days off cooking and got my fill of fast food for the
week. I told him that I'd cook and he's not allowed to complain about
what I make :P Only I'm not feeling very inspired! I think I'm spoiled
for choice...

We've got tons of food in the freezer - boneless pork chops, skinless
chicken breast tenders, tilapia fillets, ground turkey, meatballs
waiting for sauce and bacon in several forms...

There's ham, canadian bacon, salami, meatloaf and cooked chicken
breast in the fridge.

We have broccoli, fresh corn on the cob, potatoes, celery, mushrooms,
tomato and a ton of salad vegetables in the fridge and we have all the
regular pantry ingredients and spices in the pantry.

I was tossing up the idea of crumbing the tilapia in panko crumbs and
having fish and potato wedges and salad...

What else could I make that's relatively quick and easy and delicious
and uses or is accompanied by vegetables of some kind?

I'd go for the pan-fried tilapia and steam some broccoli (if you have any; I
keep frozen veggies on hand for quick meal choices).

Jill,

I have never found a brand of frozen broccoli (even if it said "choice
cuts" or "florets" on the label) that wasn't mostly fat, tough stems.
And I have tried all brands I could find.

Trader Joe's was the best of the lot, but the nearest TJ is 900 miles away.

Any recommendations?

I have never had much luck with frozen Broccoli, but I have found frozen baby
carrots and frozen Brussels Sprouts to be surprisingly tasty.

There's no TJ's here, either. But I get Pictsweet florets and they truly
are florets. They come in a bag, not a box. The boxed stuff is nearly
always mostly tough stems.

Happy Birthday, Karen!

Assuming your BD diiner is over, you have all the inregdients for classic
meals to deal with "left overs", IMHO. You could make pizza, omelts,
fritatta/tortilla de patata with fillings, hearty meat+veg soups. Or hot
sandwiches. Culinary fun & easy cooking for days. Sometimes easy cooking is
best: you have extra attention available to give what you're doing and
there's time and energy "left over" to do something fun with loved ones.

Personally, I'd feel like home made pizza with chicken, bacon, green veg,
tomatoes, optionally sprinkled with salad veggies after baking. Drizzle of
oil. Salad on the side.

I'd also be very tempted to make a mushroom soup.
