Home made Mac and Cheese
Garlic bread
Cole slaw
Crudite platter with a Ranch Dressing Dip

Dessert is chocolate chip cookies and 3 kinds of home made ice cream

Deep, dark chocolate with almonds (made with a mix of bittersweet
chocolates from Trader Joe's and Cote d'Or Brut (86% cacao).

Vanilla, with Penzey's Vanilla beans

Brown sugar Ice Cream with Poppycock "Just the Nuts" added in...sort
of a Praline taste to it

Memorial Day is set aside to remember and honor those who have died while
serving in the U.S. armed forces. I consider myself fortunate that I spent
fourteen years in the Navy through the 1980's and 1990's, including three
tours to the Persian Gulf (which became known as the "Arabian Gulf" for
political reasons during my service), and NONE of my shipmates died. So I
honor those who have died in service to my country, but the holiday isn't as
personal for me as it could be -- and I'm glad for that.

(But even though I'm no longer on active duty, I'm still in a military
environment: After I finish feeding my fourteen guests, I'll be waddling off
to work a twelve-hour shift as contractor support of ongoing combat

Sounds interesting! Please expand on this one...... cut up potatoes
(marinated in an herb-garlic mixture) roasted on a kebab? I have all

It's just the two of us this year.

I found some country style ribs on sale for 99¢ lb, so we're having
that today. Bob's margarita chicken sounds delicious although I'm not
finding a recipe that doesn't call for margarita mix.

baked beans
potato salad (unless Bob tells me more about his potato kebabs)
and dessert - maybe I'll make a cheesecake, maybe brownies...

I wholeheartedly support those who serve to protect us. Though my
politics are about as left wing as they can get, I feel those who risk
their lives in the service of this country are to be honored this day,
as well as all others.

Margarita mix is bad stuff, both for the drinks and for the chicken.
Instead, I brown chicken pieces well, then flame and deglaze the pan
with tequila. Add garlic, onion if desired, lime zest, lime juice and
triple sec. Some minced jalapeño, occasionally. A little chicken
stock if necessary to have enough liquid. Simmer till done. Pretty

I cooked yesterday since I have to work tonight, but there is plenty of
leftover chicken and the kebabk mix. :-)

I started marinating the chicken Saturday morning in Italian salad
dressing mixed with just a little fajita spice and a smidgin of chili
powder. Grilled that over a wood fire in the smoker and also marinated
and grilled kebabs made from Zuchinni squash, shrimp and mushrooms.

I stripped the kebabs into a bowl and added some melted butter and
sesame seeds before serving.

Also had corn on the cob and baked yam.

Hey Ramen can be good dressed up a bit. :-)

Sorry I didn't read this until now. Yes, my margarita chicken *is* a
marinade. First, you butterfly a chicken. Then you mix orange juice, lime
juice, tequila, and salt together and marinade the chicken in that mixture
for several hours. When you're ready to cook, you slather the chicken with
butter, sprinkle it with paprika, and grill.

The original recipe came from _The New West Coast Cuisine_, though I don't
think I follow the recipe very closely.

The "Potato Goop" recipe is from the _Cafe Beaujolais_ cookbook. You start
off by par-cooking potatoes. The recipe calls for new potatoes, but you can
use any potato, though the cooking method will differ depending on what kind
of potato you choose. If you choose russet potatoes, you'd cut them into
two-inch cubes, brush them with oil, and bake them for about 20 minutes. If
you choose new potatoes, you boil them whole for about 15 minutes. If you
choose Yukon Gold or some other full-size waxy potato, you cut them into
cubes and parboil them. Then you roll the potatoes in a "goop" made from
olive oil, mashed garlic, and herbs. (I forget which herbs the recipe
specifies. I used a mixture of rosemary and Penzey's Herbes de Provence.)
The original recipe has you then bake the potatoes on sheet pans until they
get crusty, but I skewered and grilled them instead. When the potatoes are
done, sprinkle with coarse salt.

Ohhh slathering the chicken with butter before grilling sounds
absolutely delish!

Taking a cue fromwhat your posted, I went with an orange juice
theme.... I marinated my chicken in orange juice and garlic for a few
hours. When I put it on the grill, I sprinkled some cinnamon on top.
Bad timing! The cinnamon burned, even though the heat was medium.
Next time, the cinnamon will go straight into the OJ marinade. Oh,
well.... my idea came too late - and that's how it goes.

Oh, well. It tasted good anyway.

I like the idea of rolling par boiled potato cubes in an herb, garlic
and olive oil "goop" - and then cooking them until crusty. Thanks for
specifying 2" cubes! I would have probably made them smaller.

grilled beef and turkey burgers

grilled fresh sweet corn
grilled veggies - yellow squash, zuchini, Portobellos, onions and
garlic heads (in olive oil)
fruit tray (watermerlon, pineapple grapes, cantalope)
popover rolls
grilled french bread slices (for the garlic, above)
sliced tomatoes and cukes
and Carrot cake (my fave)

Needless to say, we had a tough time flying back home after having
consumed all that food.

steak butters will work on anything grilled, its just call that because
its normally used just on steaks. they add a special flavor when used
and i use them often

Cinnamon Chicken

Recipe By :
Serving Size : 2 Preparation Time :0:00
Categories : Chicken Marinades
Poultry

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 c Oil
1/4 c Orange juice
1/3 c Honey
2 ts Coarse-grained mustard
2 ts Cinnamon
2 Garlic cloves, crushed
1 tb Fresh lemon juice
Salt & pepper, to taste
2 Chicken breast halves

Combine all ingredients except chicken in blender container. Blend
until thoroughly emulsified. Pour marinade over chicken and marinate,
covered, for 6 hours or overnight, turning occasionally.

Bring chicken to room temperature 1 hour before serving. Grill breasts
for 6-10 minutes per side, depending on heat and thickness of breasts,
basting with marinade several times.

Variation: Substitute juice of 1 lime for orange and lemon juice.

Happy Birthday!! I celebrated my 39th birthday (for the 2nd time) on Friday.
DH surprised me by flying my mom down to take care of DD and then whisked me
away to Galveston to stay at a very nice hotel overnight.

YUM!! What a spread!

We kept things simple (as we're trying to do more and more around here) and
had lemon-tarragon chicken, brown rice pilaf, and salad with spinach,
tomatoes, avocadoes, artichoke hearts, and capers. Dessert was Rice Krispies
treats and goodies from the giant Godiva basket DH got me.

orange juice (among other things).
