Default Oat cakes

These are really good. I ate them for breakfast today, with maple
syrup and a couple of fried eggs. I added a teaspoon of vanilla
extract to the batter.

ENGINE-STARTING OAT CAKES
SERVES 4

1 1/2 cups oatmeal
2 cups buttermilk
1/2 cup flour
1 teaspoon sugar
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten

Mix the oatmeal (quick oats are OK) and milk in a bowl and let sit 15
minutes. Then stir in the other ingredients and cook like pancakes on a
hot griddle. Serve with bacon.
