Default Baked hashbrowns

This one has been burned in the back of my brain for far too long.
Years ago I used to frequent Ruth's Chris for my monthly fix of a NY
strip, their wonderous baked hash browns and plenty 'O brew. Around
where I lives it seems all the kick butt steakhouses have similar baked
hash browns and all of them have been yummers.

Economics and what not have come into play so I had to say bye bye to
those monthly excursions. I have been trying my best to recreate those
hash browns to no avail.

How in the world are these hash browns done?

I don't know but the way I make baked hash browns is to saute' onion(in
duck or goose fat), add a good quality Hungarian Paprika. Then add
cooked grated potato, add a couple whole eggs(depending on how much
stuff you're making). Salt to taste. stir it up, and place in 300
degree oven for about 40 minutes. Make sure you don't scramble your
eggs but add when pan is on very low heat. Just mix em up real good.

Hmmm. I think I might have made a mistake in my post by describing the
hash browns as baked/casserole hash browns.

IIRC the Ruth's Chris hash browns appeared to have a little onion in
them and appeared to formed in a pie tin and were very crisp. I know a
lot of steak houses here locally that all do their hash browns in a
similar manner and they are all quite the awesome dish.

Regardless I think I'll try your recipe this weekend.
