Default Brandy snap basket fillings

We are in mid-winter so no fresh berries! I want to fill my
brandy-snap baskets with something interesting that will also appeal
to the small children. What? Ice-cream? And what else?

Shall I make chantilly cream and use segments of pip-free and lovely
mandarins? What shall I decorate this with? I have some crumbled
chocolate flake stuff?

I have frozen raspberries in the freezer. I could do canned peach
halves. I would like some advice on this please. The children like
raspberries and peaches. Thawed out frozen raspberries do tend to be
a bit liquidy and limp.

If someone has a favourite recipe of this type, I'd love to hear.

Have you ever added a bit of pureed fruit to the whipped cream? it makes
a nice change from plain whipped cream. I prefer a bavarian cream over a
chantilly but some people don't like to use gelatine.

There's your answer....the flavors of peach melba.

Use the canned peach halves. immer the frozen raspberries with about 2
T of sugar and a little bit of water. Smush them til soft with a spoon.
Simmer til thickened to make a raspberry syrup.

In your baskets, put a pach half. Fill it with a scoop of vanilla ice
cream, or some chantilly cream. Spoon the raspberry syrup over it. You
can decorate with chocolate flake if you want to be decadent. Or you
can skip it; you've got plenty of flavors here already!
