I've hear Crimini mushrooms, aka Italian Brown Mushrooms, called "Baby Portabellas," so maybe this is what is being referred to. They are similar to white mushrooms, but brown and a bit more flavorful. J |

Be sure to remove the stems and discard them. They are not worth messing with, (the stems that is!). I've had the best luck doing them overnight in the 'frige. Put them in a ziplock, fill the ziplock with water and squeeze out all the air. They float otherwise and don't absorb water evenly. They are ok, but I personally find the fresh to be more toothsome.
