Default Supper tonight

Jim wanted one of his comfort food meals so I made him pie and chips
(fries). But I wanted something good along with it so I made Wayne's
recipe for Corn, Okra and tomato soup but changed it a little just adding
enough liquid to a couple of tomatoes and some maggi and using frozen
corn. Turned out super!

I need to ask a stupid question. . .What is in the pie. I am making a
trip to London the last of July. This is my first trip, and I keep
hearing about Pie and Mash. I have no idea what is in the pie.

Glad you liked the soup, Helen! I've often subbed frozen corn when I
couldn't get the type of fresh corn I like. to emulate fresh corn cut from
the cob and scraping the cob, I pulse it in the food processor a few times to
slightly chop it. I, too, make it quite thick. I never thought of using
maggi seasoning in it. I'll have to give that a try.

What sort of pie did you make for the pie and chips? Beef? Beef and kidney?

Hi MoM

Do you ever get the market in Fergus? There is a stall there with
the most beautiful vegetables. I haven't been able to get there for a
few years.....Sharon

Usually beef and onion. Could be ground or diced. Could be other
veggies.

It was just individual beef pies. Store bought.

Not bad for the price.

The market has been closed. They are renovating the building and I hope
it opens again. But, St Jacobs market is only a 30 minute drive too.
It's huge.

There's a place in town called Molly's pies that sells all manner of meat
pies...individual size(4 inch) or in 9 inch serving size. Molly's is a
good little pie maker...Tbhese pies are ready to go and just require re-
heating in a 325 ish oven for 20-30 minutes. They also carry varrious
dessert type pies. Spent many a high carb night eating Molly's pies for
supper.

I keep a few of those in the freezer for when I don't feel like cooking and
want something in a hurry. It's a good idea.
