Default Vinegarette bean salad REQ

my mom used to make a vinegarette based (savory) cold 3 bean
salad. somewhere in my moving around, i've lost the recipe. all
i've found online for cold bean salads have sugar (or artificial
sweetener, which isn't allowed in my house), which mom's didn't.
while some of those recipes are ok, they're just not what i
want. i'm not used to sweet bean salad, i guess.
anyone have a not sweet recipe?

Lee, just mix a vinaigrette dressing (vinegar, oil, herbs of your
preference) and marinate your lightly-cooked beans in it for several
hours or overnight. Some red pepper dice or strips are nice for color.
Maybe onion, too. Garlic or not.

Default green beans with parsley


Top and tail french beans (now usually grown in Kenya). Boil until
tender but still firm. Rinse under ice cold water immediately. Drain,
Chop a handful of parsely with a clove or two of garlic (very finely).
Add to the beans with a drizzle of olive oil, a sprinkle of coarse salt
and some ground black pepper. Serve. Delicious.
