I f you find the ready seitan ( in one piece or in big cutlets) you can put the slices over a grill pan or you can cook it in a frying pan with some drops of oil and then season it with rosemary, salt, pepper and some lemon juice (if you like). Then you can use it like a real cutlet (eggs; breadcrumb mixed with reggiano cheese and minced parsley; and then fry). If the slices of seitan are slimmer, you can use it like "straccetti with rucola": make some stripes with seitan, then you put in the frying pan with some oil and garlic and little cubes of tomatoes, salt and pepper; mix for some instants and the you add fresh aragula. I'm thinking eggplant, squash, onion, strips of bell pepper - basically whatever you like. Cherry tomatoes are popular on kebabs of any kind. I use chunks of onion, red and green peppers, mushroom and zucchini. Sometimes I par boil the onion. Skew them, brush with a little oil and grill. |
