Kebab

Kebab means "grilled (or broiled) meat" in Persian and Turkish (spelled
Kebap in Turkish). Kebab is usually made of lamb and beef, although
chicken and fish can be used for some styles. Pork is never used by
Muslims because of religious belief but is sometimes used by non-Muslim
sellers.

Sometime I use seitan in powder and I make seitan myself. I f you find the
ready seitan ( in one piece or in big cutlets) you can put the slices over a
grill pan or you can cook it in a frying pan with some drops of oil and then
season it with rosemary, salt, pepper and some lemon juice (if you like).
Then you can use it like a real cutlet (eggs; breadcrumb mixed with reggiano
cheese and minced parsley; and then fry). If the slices of seitan are
slimmer, you can use it like "straccetti with rucola": make some stripes
with seitan, then you put in the frying pan with some oil and garlic and
little cubes of tomatoes, salt and pepper; mix for some instants and the you
add fresh aragula.
I like seitan very much.

On the off chance you are serious, just pick some vegetables you like and
cut them into chunks. I'm thinking eggplant, squash, onion, strips of bell
pepper - basically whatever you like. Cherry tomatoes are popular on kebabs

Where can I purchase seitan? (And how do I say it without christian
people thinking I mean "Satan?") I guess I can ask at my local kosher
health food store. They have all sorts of things that are hard to find.

Satan? ROTFL!!! I don't know where you can find it. Since few month I find
it in the supermarket. Before I found it only in the macrobiotic shop.

It's pretty easy. Just cut the veggies into sizes that will
cook a the same rate or that you don't mind being a little
raw. I use chunks of onion, red and green peppers, mushroom
and zucchini. Sometimes I par boil the onion. Skew them,
brush with a little oil and grill.
