For a change, I've already figured out what I'm having for dinner It's
supposed to be 102F here today with the usual slap-you-in-the-face-with-a-hot-wet-towel humidity. On the bright side, a cold snap is coming though over the weekend it's supposed to be in the 80's on Saturday! Woo hoo!!!! Anyway, tonight I'll be pan-frying 2 small tilapia fillets in olive oil. Nothing fancy; just brushed with a little melted butter and sprinkled lightly with some dried breadcrumbs to which I'll add a little Penzey's Parisien Bonnes Herbs and a little pepper. To accompany this I'll steam some fresh green peas (adorned simply with a little butter, salt & pepper) and heat up a soft whole wheat roll in the microwave to go with it. A quick meal; shouldn't heat up the kitchen too much (and will be tasty, too!). Jill |

Sounds good! A few days ago, I finally opened a box of Tilapia filets (from China - I didn't know better) that we'd purchased a couple months ago. Each TINY filet is individually vacuum packaged, and they taste terrible. The cats love tilapia sushi, though, so it's not a total loss. Anyway, the tilapia fillets: I buy individually cryo-vac'd fillets and are from Florida. The packaging is clear so you can see the size of the fillet before you buy it. I'm sorry Dams bought a box of tilapia and they turned out to be crappy. But I do think I've had the ones from China, too, and they were fine. Jill |

From what I've read, sanitation isn't of the utmost importance to some Chinese fish farmers. Broad generalization, but one that applies in this case. Carol |

And cooked in this way, with fresh herbs, should be very good and tasty. I have read you cook green peas only with butter , salt and pepper. And a little onions?
