Default Sunday potroast

Ended up with tooooooo much sauce, but I kept the application light for
photographic purposes. <G> When I actually go to eat my portion I plan
to drown the plate with it! I'm going to freeze the excess for later. It
will go well on other dishes later in the week.

That plate contains about 3 times as much food as I can eat in one
sitting!

3 lb. top round beef roast
1/2 cabbage cut into quarters
1 large onion cut into quarters
1 lb. whole mushrooms

"Sauce":
2 cans salt free roma tomatoes (with juice), chopped
1 cup Merlot wine
1 medium carrot, sliced fine
1 celery heart, sliced fine, including leaves
1 small onion, diced fine
2 heads garlic, peeled and pressed
3 tbs. fine grated fresh ginger root

6 sprigs fresh thyme
2 sprigs fresh mexican oregano
2 sprigs fresh rosemary

Mix all of the "Sauce" ingredients into a mixing bowl and set aside.

Using a deep cast iron pot, heat pot on the stove and add 1/4 cup of
olive oil. Rinse off the roast and coat it liberally with salt free
lemon pepper. Once the oil is hot, sear the roast on all sides for about
3 to 4 minutes per side.

Turn heat down to medium low and arrange cabbage, onions and mushrooms
around it. Dump the sauce on top and smooth it around until even. Place
the sprigs of fresh herbs on top.

Cover with lid and cook on low for 1 1/2 hours.

Turn heat off and let cool a bit, then carefully remove the beef,
mushrooms, cabbage quarters and large pieces of onions. Set aside.

Take remaining "sauce" and bring back up to a simmer.

Prepare an arrowroot slurry. 1/2 cup cold water and 6 heaping tbs. of
arrowroot powder mixed with a fork until smooth. Stir into simmering
sauce until it thickens. Corn starch can be substituted but is not as
desirable.

Slice roast as desired, then arrange on a plate with the veggies. Top
with sauce and serve.
