I'm diabetic myself, and days I'm out and around doing hospital visits can leave me dragging. One thing I have learned is that a roasted chicken from the supermarket, bagged salad, vegs which are already cut and cleaned is an option. I also have stuff in the freezer I can pull out, thaw, and nuke. I usually cook for one or two, but I still find having a casserole or two in the deepfreeze is handy. Another idea might be to bag your own skllet dinner packs. Recipe Source has the make your own mixes section, and has ideas to use as a springboard in making your own Hamberger Helper type mixes. It isn't fine dining, but it can be tweaked for your own preferences and your special needs. . Another option, and this is my choice frequently. is to do a composed salad for myself and the SO has pizza or whatever. The family can have pizza and side salad, and you can have salad with some kind of protein, and maybe a teeny piece of pizza. ~~~Gina~~~ |

two suggestions from me..
I keep crackers, cheese,smoked oysters and such, tuna and granola type bars in the cupboard..and fresh fruit... in the freezer I keep a fewmicrowavable budget gormet dishes and the inevidable romen noodles...teach your kids to cook and make things for themselves..hubby too... and as for the need to eat when you don't feel like it for your self...when you do perpare something..set a bit aside that can be frozen and reheated at another time personally its ice cream or yogurt or nachos and I am a fresh fruit and veggie junkie winter is my worst time and well I guess there is a thid....tortilla wraps you can throw about anything in a tortilla wrap and have it hot or cold.. |

I always have single wrapped hot dogs in the freezer and small cans of
baked beans in the pantry. Slice a hot dog mix with the beans and nuke them= hot meal.....Bill |
