I have a ton of cucumbers that are too large for pickling. I have
heard that you can cut the cukes in half, scrape out the seeds and grind the rest up for pickle relish. The only problem I have is: How do you cut up the cukes into relish-like chunks? My food processor will slice and shred but I don't think I want the shreds like cole slaw. What is a good way to do this? |

Peel cucumbers; halve lengthwise; scoop out seeds 2. Wash peppers; remove tongue and seeds 3. Peel onions; cut in quarters 4. Put everything through a mincer with course blade 5. Add salt to minced veggies and let stand overnight. Drain thoroughly 6. Add remaining ingredients; Cook 30 minutes, stirring occasionally 7. Pack in sterilized jars and seal. Also run them thru meat grinder with coarse size plate. Works great. Pam |
