Default Making pickle relish

I have a ton of cucumbers that are too large for pickling. I have
heard that you can cut the cukes in half, scrape out the seeds and
grind the rest up for pickle relish.

The only problem I have is: How do you cut up the cukes into
relish-like chunks? My food processor will slice and shred but I
don't think I want the shreds like cole slaw.

What is a good way to do this?

I think a meat grinder is supposed to work pretty good.

Helen's Ripe Cucumber Relish

Recipe By:
Serving Size: 6
Cuisine:
Main Ingredient:
Categories: Relish

-= Ingredients =-
12 lg Cucumbers overipe ok
8 lg Cooking onions
8 Red sweet peppers
1 tb Turmeric
1/2 c Pickling salt
3 tb Mustard seed
3 tb Celery seed
5 c Sugar
5 c White vinegar
Cornstarch

-= Instructions =-
1. Peel cucumbers; halve lengthwise; scoop out seeds 2. Wash peppers;
remove tongue and seeds 3. Peel onions; cut in quarters 4. Put everything
through a mincer with course blade 5. Add salt to minced veggies and let
stand overnight. Drain thoroughly 6. Add remaining ingredients; Cook 30
minutes, stirring occasionally 7. Pack in sterilized jars and seal.

Those over grown cukes are too bitter, best used for compost.

True. Btw, commercial "sweet pickle relish" is typically pickled
cauliflower.

Only two companies listed cauliflower as an ingredient in their sweet
pickle relishes. Every other company I viewed was missing it from their
ingredients listing.

I shred mine quite often. Also run them thru meat grinder with coarse
size plate. Works great. Pam

my jar of gedney lists 'sweet peppers' along with the cucumbers and pickling
ingredients. the peppers and cucumbers are artistically rendered on the label.
no cauliflower unless the super villains of gedney are sneaking it in there!
