Default Birthday Dinner

We've been feeling pretty shell shocked lately - last month we lost
our next door neighbor to a car accident, last Saturday our dear
Charlie cat to a sudden heart attack, and Wednesday a very close friend
lost her battle with cancer. Haven't felt much like cooking. Just
functioning has been an effort this week.

Tonight was my DH's birthday - neither of us felt much like going out,
so I put together a simple, but nice, dinner for two...glad for a
reason to cook. Once I kicked into gear in the kitchen, I started to
feel more like myself. Expect that for lots of RFCers, cooking is
pretty good therapy.

Grilled filets (in this house, rare, of course) with Gorgonzola-Chive
Butter, a salad of homegrown Sungold Tomatoes with paper thin red onion
and a bit of basil - dressed w/ a bit of EVOO & balsamic vinegar, and
the best darned corn on the cob I've had in years from the farm stand
down the road.

For dessert I made biscuit shortcakes filled with some juicy ripe
peaches and fresh blueberries and topped off with a big old jolly plop
of real, honest to God, whipped cream. Good stuff. Nothing fancy, just
serious comfort food.

DH opened his cards after dinner, receiving the ususal Powerball
Lottery tickets from the cats and a whitewater river day trip from moi.
Kicked back later & and watched Caddyshack - always good for a
chuckle...am a little concerned though - we've been plagued with
gophers this year & I'm half expecting DH to start stuffing clay
squirrels with explosives and planting them in the front lawn in the
morning...he's got a strange "Bill Murray" gleam in his eye...

Maybe blowing up a few whistlepigs is just what the doctor ordered to get
you out of the doldrums (been there too often lately). If not really, maybe
figuratively.......go to a carnival and locate the 'whack a mole' game and
have at.....a good laugh will do your heart good.

So true. Cooking always makes me feel better, especially if I'm doing
it for someone else.

This sounds SO GOOD! You're inspiring me :-) Housemate doesn't like
tomatoes so maybe I'll make a separate salad for her. The biscuit
shortcake sounds divine. I do believe there's a trek to the farmstand
in my morning agenda!

LOL! My father tried gassing the little *******s once. Didn't work.
I made him sit down and watch Caddyshack with me. He laughed until he
cried at the gopher antics! That is a good memory, my father passed
away 9 years ago. I still miss him every day. BTW, he gave up his
gophercidal ambitions after watching Caddyshack :-)
