Default Need advice re Indian cooking with herbs and spices

G'day mates,

I may have imagined it, but ISTR someone in RFC recently giving some
excellent advice on the methodology of using herbs and spices in
Indian cooking (and their use in any cooking FTM I would suppose).

It involved the sequence of adding the various types to the cooking
process to account for their varied responses to oil and heat etc.
(Some flavour chemicals are only extracted by oil, for example.)

Damned if I can locate the article. :-(

I thought I had "archived" a copy here, but it seems that *was*
imagination.

Googling hasn't helped, so maybe I *did* imagine the whole thing!

Can anyone help point me to the original source, please? Perhaps it
was one of those "no archive" articles, which would explain why I
can't find it on Google. In that case, I hope the author sees this
plaintive plea for help and is prepared to re-post the article. :-)

TIA.

Cheers, Phred.

It wasn't your imagination, I remember it too. It was really interesting,
but I'm not sure what to google it as. I didn't save it either. Sorry to be
no help at all!
good luck in your search.

Sarah

Thanks, Sarah, for confirming that the article did exist and it's not
just all in my head! (P.S. I prefer red wines myself. ;-)

Cheers, Phred.

Thank's for that reference. It's a good site. I had it bookmarked.
However, while it's very likely the *infomation* I was looking for is
there somewhere, it's not easy to find in summary.

Monique was good enough to respond; but only in aus.food, so you may
have missed her solution which was *exactly* the page I "remembered".

It's here (a truly horrendous URL):

[ I suggest using <http://tinyurl.com/m79l8> :-)]

Cheers, Phred.
