Several places in Houston (including Central Market and Whole Foods) are setting up large roasters this week and selling the Hatch chiles roasted or unroasted by the pound. Ophelia wrote about Carol's gin in the cupboard:
> In a cupboard? Well it's no good there! Get it in a glass with > tonic, ice and lemon ![]() Gin gimlets used to be one of my favored drinks, but I just tapered WAAY off several years ago. I've only opened a bottle of gin once in the last two years, and that was to make a blackberry sauce for a goose. It's not that I dislike it, it's just that drinking isn't part of my daily routine, so I don't think to do it. That being said, I went on vacation to New Orleans last April and drank with wild abandon while I was there, because it *is* part of my "vacation in New Orleans" daily routine. :-) Mmmm....brandy milk punch.... . "Christine and 3 Dog Night wrote about Hatch Chiles".
Was hoping to see some good SW recipes coming out of your Hatch Chile post. so I will add one for a Green Chile Stew. Perfect for enjoying the onset of Fall with NM's warm days, cool nights and Trout fishing in the Pecos. Balloon Feast is soon isn't it? 2 to 2 1/2 lbs, pork cut in 1" cubes 1/3 cup flour 2 teaspoon cumin 1/2 teaspoon ground sage 3 tablespoons oil 3 tablespoons vinegar 4 cloves garlic minced 2 large onions, coarsely chopped 3 to 4 medium sized potatoes cubed or use small Yukon gold or 2 cans small whole new potatoes, drained 3 cups roasted green chiles 2 cups tomatillo salsa (salsa verde, canned or bottled is fine if you don't make your own) 5 cups chicken broth 1 teaspoon brown sugar salt& pepper to taste 1/3 cup of Cilantro minced for garnish (optional) 1 lime sliced (optional) 1. Heat the oil in a 7-9 qt heavy bottomed stock pot or large Cast Iron Dutch oven over medium heat . Place flour, cumin, pepper, salt, and sage in a bag ( paper or a plastic storage); add cubed pork and shake to coat thoroughly. Brown pork; remove when browned and set aside. With heat still on, add the vinegar to the pan to deglaze. 2. add onions, garlic and chiles cook for 2-3 minutes until the onions are soft and have some color. Then add the potatoes, tomatillo salsa, chicken broth, brown sugar, pork in the pot. When the potatoes are fork tender, smash a couple to thicken the pot. serve with warm flour tortillas, or chile cornbread. (Optional; garnish with cilantro and a squeeze of lime). Here is another Chile Chart some may like: http://www.chileplants.com/search.as...oryID=1&Page=1 |
