Default (Italian) Rustico cheese with peppercorns

Ok, I just bought a wedge, and while I COULD eat the whole thing on
crackers with some wine, what else can I do with it ?

It says it is a mild sheeps milk cheese, with peppercorns in it. It
smells mildly gruyere-ish, and I might throw some on left-over
andouille and potatoes with some thing pickled just to see what
happens. (Think raclette)

Or I could see how it does on pizza.
