Found this recipe (where else?) on the back of a jar of Best
Foods. I don't have Italian bread crumbs on hand; what would one put in plain breadcrumbs to subsitute, besides oregano and garlic? http://bestfoods.com/recipeDisplayMR...8366&Version=1 Parmesan Crusted Chicken Ingredients: 1/2 cup Hellmann's ® or Best Foods ® Real Mayonnaise 1/4 cup grated Parmesan cheese 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.) 4 tsp. Italian seasoned dry bread crumbs Instructions: 1. Preheat oven to 425°. 2. In medium bowl, combine Hellmann's ® or Best Foods ® Real Mayonnaise and cheese. On baking sheet, arrange chicken. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs. 3. Bake 20 minutes or until chicken is thoroughly cooked. -- "Kthonian" is Jani in WA ~ mom, Trollop, novice cook ~ |

Just spread a thin coating of mayo on both sides of breasts, then sprinkle with grated parmesan. No breadcrumbs or herbs. Just bake as your recipe indicates. Dana Carpender, Low-Carb Food Guru over on alt.fan.cecil-adams, has a recipe for parm-crusted chicken wings...she calls them "Heroin Wings". I'm curious about something s/he says: "Not sure what to do with those wingtips? Freeze them for soup, they make great broth" I *like* the tips, even thought there's only a tiny amoung of meat on them. Am I alone?? These are a bit messy and time-consuming to make, but they are worth every minute. They will impress the heck out of your friends, too, and you will wish you had made more of them. They also taste great the next day. Ingredients: 4 pounds chicken wings 1 cup grated Parmesan cheese 2 tablespoons dried parsley 1 tablespoon dried oregano 2 teaspoons paprika 1 teaspoon salt 1/2 teaspoon pepper 1/2 cup butter Preparation: Preheat the oven to 350 degrees F. Cut the wings into drumsticks, saving the pointy tips. (Not sure what to do with those wingtips? Freeze them for soup -- they make great broth). Combine the Parmesan cheese and the parsley, oregano, paprika, salt and pepper in a bowl. Line a shallow baking pan with foil. (Do not omit this step, or you will still be scrubbing the pan a week later.) Melt the butter in a shallow bowl or pan. Dip each drumstick in butter, roll in the cheese and seasoning mixture, and arrange in the foil-lined pan. Bake for 1 hour, and kick yourself for not having made a double recipe!
