Default Recipe: Shella's Pinto Beans

This is a recipe that was invented by my daughter-in-law Shella (yes that's
the correct spelling) and her dad. It's one of our family favorites as an
accompaniment to standard Texas BBQ along with potato salad, etc.

Initially, no substitutes were no allowed. Now, of course, everyone plays
fast and loose with it <g>. If you can't find Owens sausage or Chili-O
Seasoning mix anything else will work fine.

Shella's Pinto Beans

Recipe By :Shella Marksberry & Jim Price
Serving Size : 14 Categories : Crock Pot


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound dried pinto beans
7 cups water
pepper -- to taste
1/2 pound sausage meat -- cut up
For sausage meat I use Owens
1 package Chili-O Mix
1/4 cup Sugar

Cover rinsed, sorted beans with water in Crockpot. Add package Chili-O mix
and pepper. Cook on low overnight.


The following morning add 1/2 lb. uncooked Owens breakfast sausage (the
kind that comes in a plastic tube) and 1/4 cup sugar.
Stir occasionally.

Cook on high about 4 hours longer.
