Default Mozzarella, Pesto and Fresh Tomato Panini

Simple yet delicious dinner tonight. The tomatoes were from my garden as
well as the pesto made from basil in my garden. So, good I had to double
the recipe.

Mozzarella, Pesto and Fresh Tomato Panini

Ingredients
8 slices country Italian, sourdough or other firm-textured bread
8 slices SARGENTO® Deli Style Sliced Mozzarella Cheese
1/3 cup prepared pesto
4 large slices ripe tomato
2 tablespoons olive oil

Prep Time 5 minutes
Cook Time 8 minutes

1. Top each of 4 slices of bread with 1 slice of cheese. Spread pesto over
cheese. Top with tomatoes and remaining slices of cheese. Close sandwiches
with remaining 4 slices of bread.
2. Brush olive oil lightly over both sides of sandwiches. Cook sandwiches
over medium-low coals or in preheated ridged grill pan over medium heat 3 to
4 minutes per side or until bread is toasted and cheese is melted.

Hahaha! This is true! And I would like to shamelessly take this opportunity
to say that the first time I encountered this wonderful sandwich was in
Florence (Firenze!) Italy during that sleepy time in the afternoon when all
the Italians are *cough* "napping" and everything is closed except a few
places catering to Americans and Germans and other uncivilized souls who
just want to grab a quick bite mid-day.

YES it tasted better while gazing at the Arno even with smell of the Arno
all around!

Oops. I would have listed it as 1/3 cup pesto. "Prepared" made me think
"store bought." I stand corrected.

Someone needs to put on their reading glasses... I made my own pesto and no
I didn't buy Sargento Mozzarella... just some good old fashioned slice it
yourself mozzarella. That's what children are for slicing and grating
cheese.

I printed the recipe as I found it on the internet. I would think people
who love to cook will tweak the recipe as they see fit to suit their tastes
and convenience. Isn't that what cooking is all about? Recipes are not set
in stone in my mind they are more guidelines to achieve a certain taste.

Good attitude. I don't bother changing recipes I grab from the net
either, I just save them to file. The recipe (as printed) is a good
beginning for novice cooks and the rest of us can figure out how to
make it our own.
