If you get some, roast them. They are absolutely wonderful that
way....

I would give you a method for roasting them, but I am surrounded by so
much stuff here at the moment, that I am not sure I can find the
method. I *think* one method I have tried before involves putting a
tiny bit of water in the pan you plan to roast them..and then putting
in the beets. Don't cut off the tops (except for greens) as they will
bleed all over. Roast them at about 400 degrees til tender, then let
cool a bit and then slip off the skins and tops. Oh, and I think the
pan should be covered, but I can't remember, to be honest. Maybe
someone else can pop up and really tell you how to roast them...LOL.

You could butter them, but I find them so good this way, I just eat
them plain.

that inhospitable environment.

I think I'm the only person in the world who doesn't care for roasted
vegetables. I prefer steamed. I do add onions, carrots, and potatoes
to my pot roasts, but that's it. I thank you for the suggestion,
though.

i've got beets ready in the garden (assorted colors). Boo & i
like beets. Tom hates them, but loves the greens. works
perfectly
as to cooking something one hates: it's possible to do so
well. i've been told i make amazing marinated mushrooms.
people fight over them. i wouldn't touch one on a bet. i
*hate* mushrooms.

Hiya, Fleece! What about them? I picked up my opened-and-judged
jars on Sunday and now look at that friggin' jar of opened pickled
