Default supper tonight

Tonight it was a pan fried spice rubbed pork steak and baked spaghetti
squash. After cooking the squash I shaked on some maggi sauce and added a
pat of butter nothing else....very nice.

Default supper tonight

I adapted a chili rellanos casserole recipe from the 5:30 Challenge
Cookbook (which is quite good, by the way -- I have liked everything I
have tried from it so far)

I oiled a casserole dish with olive oil, then mixed in the dish a
drained and rinsed can of black beans with a roughly equal amount of
salsa. I topped the beans and salsa with a layer of queso blanca. I
topped the cheese with a layer of whole canned chilies; the chilies
were opened so they would lay flat. On top of the whole mess, I
poured over a batch Jiffy mix cornbread batter. I baked it at the
heat indicated on the Jiffy box until the bread was cooked.

It was good! My husband loved it. I don't care that much for Jiffy
mix. It's too sweet for my taste. Next time, I'll use my own
cornbread batter for a topping. Or maybe crumbled tortilla chips. Or
maybe layer tortillas in amongst the filling.

I'd suggest a bisquick topping. We used something like a cup of
bisquick, 1/4 or 1/2 c milk (can't remember but it should be kinda
thickish) and an egg, beaten with a hand blender, for chile rellenos
breading.

We had a big Cobb salad tonight: greens, scallions, chives, celery,
steamed asparagus, avocado, tomato, colby cheese, soy chicken, soy
bacon, hard boiled egg, and homemade croutons. Lowfat ranch dressing.
Nice to have a summer dinner again after a few cool rainy days. (ps,.
the celery and asparagus were to get them used up. I know they don;t go
in cobb salad.)

Jude,

Cobb salad is the ultimate best "guilt-free, meal in itself" salad! I use
Ken's Caesar salad dressing for mine.

Chopped steamed asparagus sounds like a great addition!

I had a 20 oz. plastic bottle of Pepsi, the remains of a bag of Blazin'
Buffalo Ranch Doritos, some processed turkey slices and in a few
minutes I'm heading down to the BP station for for a nice chocolate
dessert in bar form.

--Chris, who hasn't been to the grocery store in a few days and might
currently be considered by some foodies to be, well, slumming.

Fried egg and onion sandwiches with mayo on fresh white bread. Potato
chips and pickles.

Zucchini casserole (it's got a custardy base, with onions, green bell
peppers, sliecs zucchini and yellow squash, parmesan and cheddar cheese
in it) served over egg noodles, with sauteed mushrooms on the side
(mostly white button, about 8 shiitake for flavor, cooked in olive oil,
worcestershire sauce, sesame oil and soy sauce). Alsom a fruit salad of
mango, watermelon, grapes, and banana sprinkled with key lime juice and
honey, and topeed with shredded coconut.

We had chicken paprikas, halushky and fried cabbage. I didn't say it
was healthy but it sho was good. Starbucks coffee ice cream for
dessert. Drizzled with chocolate syrup. I coulda died and gone to
heaven and would've been disappointed in heaven after that dinner.

Supper tonight was a grilled marinated pork steak and grilled
asparagus...I have blood work and pee in the cup tests tomorrow...never
thought about that till after I ate the asparagus...oh oh...
