What's a good dipping sauce for cold steak?
 
I've got a leftover top sirloin cooked rare that I'm gonna slice up in
thin strips... and I'm in the mood for a good dipping sauce to
accompany it... any of you have a favorite recipe?

One of those Cuban steak sauces with cilantro (mojo). I don't have a
recipe but a local restaurant serves a refreshing steak garnish like
that (it has a different name, but I can't remember what it is).
Their version is similar to an herb relish like gremolata.

I see if you do a web search for "cuban cilantro steak recipe" you'll
find lots of recipes to try, and more specific if you try "mojo"

Here's an interesting one I found that mixes in yogurt for a dressing.

Horseradish sauce -- mayonnaise thinned with sour cream and maybe a
splash of vinegar then mixed with prepared horseradish to taste. Add
a little salt and pepper, too.

For a cold steak sandwich I like to mix sour cream, mayo, horseradish,
s&p, and a squeeze of lemon juice. I think that'd work for dipping,
too. -aem

You could go south east asian: chili flakes, fish sauce, lime juice, garlic,
soy sauce. Optionals: spring onion, toasted sesame seeds, lemongrass.

Soy, oil, vinegar, maybe some chopped onion and a touch of toasted
sesame oil. But you gotta be careful with sesame oil. It can dominate.

Sometimes I mix some curry powder (to taste) with a large dollop of
mayonnaise. A little bit goes a long way.

The phrase "dipping sauce" is an oxymoron. Either it's a dip
into which you dunk the steak, or it's a sauce you place on top
of the steak.

Any of these:

Nuoc Cham
Chimichurri sauce
Romesco sauce
Inner Beauty Hot Sauce
Nacho cheese with sliced jalapeņos
Peanut sauce
Plum sauce
Mashed avocado with lemon juice and soy sauce
Coarse mustard with horseradish
Hoisin sauce (can be diluted with a bit of oil)
Sukiyaki sauce

You can also make a passable sauce by combining all the ingredients for
steak tartare except for the beef.

i wouldnt be CAUGHT DEAD PUTTING CATSUP ON A STEAK

it's like.. the shinier the finish the cheaper the wood

so.. the more sauces and what not on a steak the nastier the meat

damn near putrid

Or hot butter with just salt and freshly cracked black pepper. I had
leftover rare beef short ribs today with just popcorn (ultrafine
ground) salt and black pepper.

Cholula is only one step up from Tabasco. For much nicer heat, a pinch
of Penzey's Aleppo chile flakes. They're also a great thing to have on
the table with chili con carne, for people to add to taste.
