Default Mini-cooking frenzy

Tropical Storm Ernesto is about to pass overhead and we have a freezer
full of food, including meat. I don't THINK we'll lose our power for
long, if at all, but better to be safe than sorry... We have a camp
stove to heat stuff up with and to cook simple meals if worst comes to
worst, but you can't bake or roast with it for obvious reasons. So
that means a mini cooking frenzy!

When John got home I made him some lunch - CLTs... panfried chicken
strips cooked till they were crispy, fresh lettuce and tomato on
wholegrain sourdough toast with mustard and mayo. They looked sooo
good, but I didn't have any - I had curry from the freezer. I don't
make it often and I'm not going to risk wasting it!

In the oven right now I have two pounds of basic beef meatloaf with
canned tomatoes, a dish of honey-soy chicken drumsticks made with a
marinade I had in the freezer, and a tray of potato wedges.

And once all the meat is done, if the weather isn't too bad yet I'll
make a big batch of chunky oatmeal cookies with lots of craisins,
raisins and pecan nuts. I made some last weekend and they lasted all
week long without showing any signs of staleness... not to mention
they were delicious!

We'll see if it hits us as well. I went out and bought some Campbell's
Chunky Soup, just in case.

Will do I'm expecting more of a whimper than a bang... the biggest
likelihood is that our area will flood because it's very low-lying and
it doesn't take much to inundate it. But since our apartment is
upstairs we're high and dry... I'm sure we'll be fine.

Stop it, you're making me hungry! I always worry about that freezer full of
meat. Did you stock up on ice, in case you lose electricity?

Better to ask yourself, "Why did I do all that?" instead of, "Why
didn't I plan ahead?" I hope the storm turns out to be relatively
harmless.

You do now that you *can* do real cooking on a camp stove don't you?
Sure it takes a bit more skill and creativity, but it's a challenge and
something to keep you occupied if you're hiding from the storm.

On the rare occasions that I go camping I take the challenge and see
just how fancy a meal I can cook on a little camp stove.

Our freezer is too small to put much ice in it, especially when it's
got lots of food in there... I cleared as much space as I could by
taking out the frozen cake and the Stouffers pot pies (the cake was
delicious but the pot pies had some kind of AWFUL fat in them and they
gave both of us killer indigestion) and cooking up some of the meat...
and I put containers of water into the space last night and this
morning.

When we eventually have a house of our own, the first appliance we'll
be putting into it is a chest freezer to supplement the one in the
fridge... alas there's not really any room for one in the apartment.

I know I can... but some things are easier than others, and we have a
limited supply of gas bottles. (not to mention that I don't feel
comfortable using the stove indoors for long at a time, even with the
windows open. The risk is minimal, but it does say on it 'outdoor use
only'... last year when we had no power I cooked one nice hot meal a
day for us, and it was a blessing!
