I have some meats that have been in the freezer a long time.
Perhaps a year plus. I know if I use it, it may not taste the best.

My question is - Ignoring the taste issue, will it be safe to eat?

If it has remained frozen at 0 degrees F or below it should be safe. One
of the government agencies, the Department of Agriculture I think, has
some papers on freezing foods which indicate that while the subjective
quality may decline over time, the frozen food will remain safe
indefinitely if it remains frozen at or below 0 degrees F.

Yes, and if packaged properly, it might be ok.
I've found (for me personally unless it's vacuum packed), the cutoff
seems to be about 3 years, but I've had some 4 year old stuff that was
ok.

Just be sure to write the item and date on everything you freeze...

At the very least, I will double bag and remove as much air as possible.
