Lemon Bars Crust
Web Posted: 12/19/2006 10:55 PM CST San Antonio Express-News •3 cups flour •3/4 cup powdered sugar •1 1/2 cups butter TOPPING: •6 eggs •3 cups sugar •1/2 cup fresh lemon juice •1/4 teaspoon lemon extract •3/8 cup flour •3/8 teaspoon baking powder •Powdered sugar, for sprinkling For Crust: Preheat oven to 350 degrees. Sift together flour and powdered sugar, then cut in butter. Spread in 10-by-15-inch pan and bake for 25 minutes or until golden brown. For Topping: Lightly whisk eggs. Stir in sugar, then add lemon juice and lemon extract. Stir in flour and baking powder and pour over baked crust. Bake for 25 minutes. Cool completely, then sprinkle with powdered sugar. Cut into bars. Makes 30 bars. |
