Chicken Flautas ( flutes)
These are little fried tortillas filled with in this case chicken Chicken flautas are traditionally served with rice and beans which maybe construed as a combo plate by the Internet Authentico Mexican Cooking Police ( IAMEXPO). You can also use beef or black beans instead of chicken as fillings to make the flutes and still be authentic. Ingredients: 12 corn tortillas 2 cups Tomatillo Sauce 1 cup grated cheddar or similar cheese 2 cups cooked, shredded chicken, dark and white meat is best enough Corn or vegetable cooking oil for frying , depending on the pan size 1 cup shredded Iceberg or similar lettuce 1/2 Crema or sour cream Guacamole for garnish, please note this is a simple MOLE made from the avocado, hence Guaca-MOLE Directions: Combine the chicken with the tomatillo sauce, heat, and keep warm. Heat a cast iron skillet or griddle to medium-hot. Lay a tortilla on the hot surface for a few seconds, then turn and heat the other side. This will make the tortilla pliable enough to roll in a tight flute. Spread 1 heaping tablespoon of the chicken/tomatillo sauce mixture along one side of the tortilla, and roll the tortilla into a flute -- as tightly as possible without tearing the tortilla. Lay the tortilla flute flap down, and continue filling and rolling the rest of the tortillas. Heat about an inch of cooking oil in the skillet. to 365-375°F. Carefully lay the flautas, three at a time, in the hot oil, flap side down, and cook until they are golden and crisp. Drain and keep warm until all flautas are cooked. Serving: Place 3 flutes on a warmed plate. Garnish with crema or sour cream, lettuce, tomato wedges, and a scoop of guacamole. Makes four servings of three flautas each. Variations: you can sauté onions, garlic and chiles to mix into the chicken filling prior to frying the flutes if you wish but you must apply for and receive a variance from IAMEXPO as a deviance from code, prior to actually serving it on the unsuspecting public. Public hearings for a variance code is not necessary for Tex Mex adapations, please consult local authorities for AZ -Mex, Cali-Mex and NM-Mex code variations. |
