street vendors pancakes
hi
does somebody have the recipe to make pancakes like the mexican street vendors? they are very different from common or from package pancakes. the taste and the structure is different, I ask a few times for the recipe to those street vendors but they didn't want to give it to me. can anybody help? jl |

I would think it would be a packaged mix. Have you ever bought mixes
in Mexico? Then again, it's the whole experience of buying the pancakes in the open air, on holiday, from a colourfully painted street cart, that makes the pancakes taste the way they do. This reminds me of my poor student days and the proverty food I often
ate in Mexico. I loved the street vendors pancakes These street vendor pancakes differ in different parts of the country but this mix comes very close to what I remember from Verracruz: Mezcla para hacer cachapas http://www.miquincalla.com/shop/eng_...productid=CHMJ I also spent some time in Venezuela and this packaged mix is very close. It's pre-cooked yellow corn meal and wheat flour with a little sugar and turmeric for color. cachapas are made with corn flour, and mexico street pancakes with wheat

I never bought them from street vendors, but have had pancakes in
restaurants in Mexico, they are sooooo good! Quite different than what we have it. If anyone can come up with a recipe, I'd sure appreciate it! Hi,
I have here the recipe we (my family) have to prepare hot cakes as we call them in Mexico. It comes from my Granny 1 1/4 cup of sifted flour. 2 1/2 tea spoons of baking powder (Royal) 3 table spoons of sugar. 3/4 tea spoon of salt. vanilla essence few drops. 1 egg 1 cup of milk 3 table spoons of melted butter. Sift together all dried ingredients, the flour again with them. In a bowl scramble egg, milk and few drops of vanilla essence. Add to the dried ingredients and stir until you get a soft mix. Add the melted butter which has to be not warm and stir again. That's it. What I have heard about street vendors pancakes is that the substitute part of the milk by water but I really haven't tried this. Hope you like it. Irma.
