Default salsa de chile arbol


Salsa de Chile Arbol

1/2 cup oil
10 chiles arbol
2 tomatoes
2 cloves garlic
1/2 cup tomato sauce
1/2 tsp. salt
1/2 tsp. sugar
red wine vinegar as needed

Heat the oil in a small cast iron pan and fry the chiles until they
are a deep, burnished red. Remove to paper towels and blot off oil.
While the chiles are cooling, broil the tomatoes and garlic about
10 minutes, turning once. Remove skin from tomatoes and peel garlic.
Stem chiles and break pods into pieces. Place the tomatoes, garlic,
tomato sauce, salt, sugar and chiles in a food processor and process
until chiles are broken up into small, dark flecks. Stir in red wine
vinegar as needed to bring sauce to desired consistency.
