Does anyone have a authentic (boy have you all heard this before) recipe
for "Chicken Salad Tostadas?" A wonderful "mexican" chicken salad atop tostada shells. I had this at a party and the cook refused to give me the recipe. The BIG secret was the salad recipe...All I recall was -chicken, mild in taste, creamy, possibly sour cream, seasonings unknown?? It had a "potato salad" look/consistency with chicken being the potatoe --salsa/tapatio added the kick ---she used "pre-made" tostada rounds This is a great summer meal, refreshing! The sauce is available commercially and many Deli's take advantage of it. It had a strong celery and garlic taste Nest'ce Pas? HTH Wiz |

It is prepared with diced breast chicken, peas, potato and carrots in cubes and the dressing is a mix of mayo and sour cream and a bit of mustard. Mustard gives a nice taste to the dressing. Salt and pepper of course. Some people don't like the strong taste of the fresh celery so I add a little bit of celery in powder, just to give a touch. To decorate you can add avocado and tomato.
