Add onion, jicama, cilantro, and salt to taste and toss well. Cooks' note: .. Jicama can be cut into julienne strips 6 hours ahead and chilled, covered. Makes 8 servings. Note: This recipe was originally written for people with diabetes or low carb diets. That's why it uses Splenda. If you have no such dietary restrictions, you can use sugar instead.
