Some recipes for masa call for baking powder, others do not. Which do you

For baking powder to work, you would need to make the tamales really fast and
get them into a steamer really quick. I can't see how it contributes anything. In Mexico, they use anise water or water that tomatillo husks have been cooked in to give the masa some lightness, but again, I don't see any chemical reason why this would work. |
